In Progress artist Joel Passawe is a chef and developing photographer and filmmaker. He is sharing with us some of his favorite recipes - to feed you visually while we wait for our favorite restaurants to re-open after the pandemic has passed.
Quarantine Kitchen #1
The dish that I have prepared today is a Caribbean street steak taco with a pineapple mango salsa. I made this dish today because it reminds me of an amazing competition that I participated in a few years ago. It was my first time competing against other schools in a culinary competition and I was nervous. I remember my teammates looked at me and said, “don't worry about everything that is happening around you, just relax and do what you need to do to get through this.” These words are helping me get through this epidemic and I hope these words encourage you to do the same.

Hi my name is Kpru Htoo. I am a professional chef in the making. I have been cooking since the age of 5 in my parents restaurant back in Burma and a few years ago cooked alongside Joel and few other really close friends. My favorite memory with my team was at a huge fundraising event called the Taste of the NFL. Our team got the once in a lifetime chance to work with a celebrity chef and his crew to make an amazing appetizer, Shu Mai pork dumplings with a kimchi slaw. That night we also got the chance to meet many other celebrities and had an amazing time.
The name of this dish is pork fried rice with crispy pork belly.

Hi my name is Imani Mansfield. I am the sous chef at Eat For Equity catering. We are located in du Nord distillery on the south side of Minneapolis.
I have been virtually out of work due to the virus, but have been using this time to create some fun stuff!
This is pasta Alfredo with caramelized red onion, broccoli, asparagus, Brussel sprouts. And topped with green onion. This dish feeds the carb monster that lives inside of me, and also hits with the nutrients of all the green veggies. I basically put all of my favorite green veg in this dish, with a dash of Cry baby Craig's hot sauce for that perfect kick!

This dish is for a food lover, the name of this dish is "The meat lover triangle". This is another dish from Kpru Htoo. This dish is made up of a white rice tower with beef stir fry, basil leaf, green chilies, a Japanese style steak, and pepper stir fried shrimp topped off with Thai style sunny-side up (sunny-side up with crispy around the side).

The dish that me and mom have made is a traditional West African dish called Jollof rice. (Another dish from me and my mom). This dish consists of chicken, beef kielbasas, mixed vegetables, a mixture of bell peppers, onions, garlic and habaneros, tomato paste, multiple seasonings, and the main ingredient, rice.

The name of this dish is a Tri-tip steak served with creamy potatoes (Another dish from Kpru Htoo).
"The reason I created this dish was because of a request from a friend of mine. He is going to be deployed overseas and wanted me to make him a dish that reminded him of being at home.”
Joel Passewe is a photographer and filmmaker. He began working with these mediums in 2019 and has quickly become part of the In Progress teaching family leading many activities at with our partners at the McDonough Homes.
